Paella

Three person in the kitchen having beers....!!!???

Identity of these people has been protected as they were drinking during office hour 
Wonder what are they up to ?


Three cooks having a beer while experimenting a new dish...Paella !

Check this out ! 

In the paella pan, brown the chicken thigh which has been marinated with salt, pepper and paprika. Remove when it's half done. 

With the same oil cook the chorizo and put it aside.

In goes the bacon, add some olive oil and fry the bacon. Once the bacon is almost done, stir in the onion and garlic. Cook till onions are translucent.

Stir in the rice and cook for 2mins. Let the rice coat with the oil. Add in the chicken stock, saffron, can diced tomato and bring to a boil. Mix it well and season with salt and pepper to taste. 

Add in the chicken and chorizo and let it cook for 15mins. Then in goes the shrimp, squid and peas. Simmer for another 10mins or till the liquid is all gone.

Remove from the heat and let it rest for 5-10mins. Garnish with parsley and lemon wedges 



Voila !


Hmm...someone might have sprinkle some beer in it !!???

Serving for 6 paxs
Ingredients
100g Chorizo, cut into pieces
100g Bacon, diced
500g Chicken Thigh, sliced
300g Shrimp
80g Squid, cut into pieces
3cups Rice
50g Onion, chopped finely 
20g Garlic, chopped finely
1can Tomato 
10pcs Saffron
100g Green Pea
2 Lemon, cut into wedges
1tsp Paprika
1tsp Salt
1/2tsp Pepper
1.5lit Chicken Stock
2tbsp Olive Oil 
1tbsp Parsley, chopped finely

Lushan...Places !...Food !

continue...guess what we had for lunch ?


Tilapia Soup ! We had Fried Tilapia, Tilapia in Soy Sauce, Steamed Tilapia with Bean Paste Sauce,...He he...Tilapia for the next 2 days !

At the mountain side, choice of food is quite limited. The Tilapia actually came in handy.

Cucumber with Hoi Sin Sauce. This cold dish is quite common in China, I am capturing this because it's there on the table every meals.



Ginger Soup ! It's just Ginger in hot water. Hmmm

Let's go back to Shanghai !

Lushan,..Places...Food !

I was asked to pack up and just take a flight to Shanghai ! From there onward my friends arranged another flight to this place....



No idea where was I going till landed...Lushan ! O.I.C...must be one of the famous mountain in China. Let's see what we have here the next morning...

Up...OK that's it ! I am walking back to my room ! Sobs,...sobs, actually this place is a well known tourist attraction famous for it's natural sceneries. Sadly, we have to abandon the site seeing as the weather doesn't permit.

And this is what we ended up doing for the next two days...POND FISHING.

    
These are my local friends trying their best to entertain the guests. It was fun though !

Fuzhou Fish Maw Soup

Dedicated to my Foo Chow buddy !

Mission accomplished !

First mission was to produce Fuzhou Red Wine...Done !

Second mission cook Fish Maw...Done !



Preparation: Fish Maw (Soaked till soft, remove excess water. Fry for 3mins), Shitake Mushroom (soaked and sliced thinly), Bamboo Shoot (Rub with salt, boiled for 2mins and sliced thinly), Pork Belly (sliced)Black Fungus (Soaked and sliced thinly), Carrot (cut into strips), Ginger, Garlic, Eggs and Chicken Stocks.




Heat up oil, saute Garlic and Ginger. In goes the Pork Belly and stir fry for 2mins. Add in the Shitake Mushroom. 

Throw in Fish Maw and fry to make it softer. Pour in the Chicken Stocks, add in the Carrot, Bamboo Shoot, Black Fungus and let it come to a boil. 

Lower the heat and let it simmer for 20mins. Slowly add the Kampung Koh Chilli Sauce and Tomato Sauce. Adjust the spiciness and sourness to your likings. 

Season with Sugar, Salt, Pepper and Black Vinegar, to taste. If it's not thicken enough, add cornstarch. 

In goes the beaten egg and it's....DONE ! 

Garnish with Spring Onion or Coriander Leave.

Serving for 4paxs

Ingredients
100g Fish Maw (soaked and fry)
200g Pork Belly (sliced)
4pcs Shitake Mushroom (soaked and sliced thinly)
4pcs Black Fungus (soaked and sliced thinly)
1/2pc Carrot (sliced thinly)
200g Bamboo Shoot (boiled and sliced thinly)
20g Ginger (sliced thinly)
20g Garlic (minced)
800ml Chicken Stocks
2 Eggs
150ml Kampung Koh Chilli Sauce
100ml Tomato Sauce
2tbsp Vinegar
1/2tsp Pepper
1/2tsp Salt
1tsp Sugar
